My Mom's March Challenge- One Unexpected Meal

My Mom completed her Monthly Craft Challenge for March pretty soon after she was given it and yet again she has done the unexpected . . . She's thinking so far outside the box, she doesn't even see the box! Instead of interpreting March's calendar picture with a floral sweet treat as most would've done (me included), she dismissed cake baking in favour of something completely different. The result was a lovely & health(ish) meal one Saturday night. (Please excuse the photos, my house at night is shoddy when it comes to lighting)
Here she is to share the recipes. . .

 "I wanted to create a healthy meal rather than just opting for a cake like I was expected to. I decided to look at the picture as a whole rather than focusing on the flower design. So I thought about the types of bags that be used in cooking and came up with a main course & dessert. I was also inspired by other details in the photo- I chose to use fruit because of the wooden pear in the background and the knitting needles are represented by the cocktail sticks (in the Peaches)."
It may not look as pretty as you'd expect but just wait until you tuck into those 'bags'
(All recipes serve 3)
Fish and Rice parcels
340g mixed fish and prawns
142g rice
Bunch of spring onions, chopped
1 teaspoon paprika
170ml fish/veg stock
113g rocket
1 tablespoon chopped parsley
Zest & juice of 1 lemon
9 sheets filo pastry

Preheat oven to 180
Sauté onions and stir in paprika
Bring stock to the boil then add rice.Leave to simmer for 10 mins or until the liquid is absorbed. 
Add the onions to the rice, season with salt & pepper  and stir
In a bowl, mix the fish, parsley, lemon zest & juice and seasoning
Lay out sheets of filo, (three sheets on top if eachother for each parcel) brushing each sheet with oil
Blanche the rocket for 30 seconds and then drain, squeezing out as much moisture as possible
Layer rice, fish and rocket on the filo and pull up the edges to close into a sack shape
Brush with oil and bake for 20 minutes
Vegetable packets
Variety of veg (I used carrots and peppers-sliced into strips, asparagus and green beans) 
14g butter
Zest & juice of 1 lemon
Parsley

Mix vegetables, lemon and some seasoning and divide equally onto 3 pieces of parchment paper. Dot each with some parsley and a little butter before making paper into a closed parcel around veg.
Bake for 15 minutes at 180
Peach 'Clutch' 
3 peaches
Chopped strawberries
1 apple, peeled and diced
1 dessert spoon of honey
Walnuts
Greek yoghurt

Cut peaches in half (not quite all the way through) then remove stones and a little flesh. Chop this removed flesh into pieces
Use the chopped peach, strawberries and apple to fill the peaches and drizzle with honey.
Close up peach halves using cocktail sticks to secure
Bake at 180 for 15 minutes
Serve with a dollop of greek yoghurt and some walnuts on the top

So that was my Mom's March challenge and it was lovely-  my photos definitely don't do it any justice!
As April's challenge has already been set, we are already busying ourselves with that, I'm so excited about mine. . .
