Pancakes 3 Ways

Tomorrow is Pancake Day which means that you have an excuse to eat a bucket-load of pancakes-Happy days!
There's nothing wrong with having your pancakes with the traditional lemon and sugar (that's actually my favourite way to eat them) but if you fancy something different to your usual and a little bit special, here's three easy and delicious accompaniments to serve with yours...

Cosy Pancakes
The weather is still pretty chilly so serve your pancakes with spiced, caramelised apples, caramel sauce and cinnamon cream to warm you up
For the Cinnamon Cream:
Pour 125ml double cream into a bowl with a teaspoon of cinnaamon and a 1/2 teaspoon of vanilla essence. Whisk until thick and fluffy and store in the fridge until ready to serve

For the Caramel Sauce:
Melt 113g butter in a pan then add 220g of light brown sugar and 85ml double cream and stir until the sugar has dissolved. Bring to the boil and allow to bubble for 3 minutes - no longer. Remove from the heat and allow to cool a little before serving

For the Spiced Apples:
In a saucepan, melt 50g butter over a low heat then add 100g brown sugar and stir until it's dissolved
Put 2 peeled and finely chopped apples into the pan, add a teaspoon of cinnamon & a 1/2 teaspoon of ground ginger and leave to cook, stirring occasionally, until the pieces are soft. Drain off the liquid and serve warm.

Fruity Pancakes
A refreshing accompaniment for your pancakes with fresh fruit, raspberry sauce and coconut cream
For the Raspberry Sauce:
Put 2 cups of raspberries in a blender with 64g of icing sugar and a few squeezes of lemon juice then blend until smooth. Store in the fridge until serving time

For the Coconut Cream:
Leave a can of coconut milk in the fridge overnight. Before serving time, open the can and spoon the cream on top into a bowl, stopping when you get to the water. (Alternatively, in some supermarkets you can buy cartons of just the cream). Whisk the cream with 1/2 teaspoon vanilla essence until fluffy and serve immediately

Serve with fresh raspberries and strawberries...

Caffeinated Pancakes 
Serving your pancakes with mocha syrup, chocolate chips and whipped cream would be a yummy grown-up treat...
For the Mocha Syrup:
Whisk together 1/2 cup of strong coffee, 35g cocoa powder, 50g granulated sugar and a pinch of salt  in a saucepan, over a medium-low heat until it reaches simmering point. Leave it to simmer for about 5 minutes, stirring constantly, until the mixture begins to simmer. Leave to cool a little then serve

Serve with chocolate chips and whipped cream...
